Ho! Ho! Ho! – Peppermint Poke Cake

It’ beginning to look like Christmas here at our house. And along with Christmas comes family get-togethers, parties, and events. Because we all are stretched for time at this time of year, I like to keep a couple of easy recipes that deliver a big punch of flavor. So here goes…….

Peppermint Poke Cake

Ingredients

1 Chocolate Fudge Box Cake Mix (also ingredients needed to make box cake – eggs, oil, & water. 

 

1.4 oz package of Instant Chocolate Pudding Mix

2 cups cold milk

1/4 tsp Peppermint Extract

 

2 cups crushed peppermint candy canes

8 oz container of Cool Whip

Instructions:

Prepare and bake cake according to box instructions in a 9 x 13 prepared pan.  

Right before cake comes out of oven prepare the pudding with the 2 cups milk. Add Peppermint Extract and whisk until blended and starting to get thick. Fold in 1 cup of crushed candy canes, reserving remaining 1 cup for later. 

After cake come out of oven use a wooden spoon handle to poke holes all over the cake.

 

Pour the pudding mix over the warm cake and use a rubber spatula to spread pudding evenly over the cake, making sure to get the pudding into all the holes. 

 

Cool in refrigerator for 30 – 45 minutes. 

Top evenly with Cool Whip and sprinkle with reserved 1 cup of crushed candy canes.

    1. This is always a hit and sooo easy. Just a tip I learned recently – don’t sprinkle candy cane pieces on until just before you serve. If you do it the night before they might “bleed.” Enjoy!!!
